Kimchi Fried Rice
ingredients
1 cup kimchi, chopped
1/4 cup kimchi juice
2 tbsp gochujang
1 tbsp soy sauce
2 tbsp toasted sesame oil
1 tbsp olive oil
1 green onion, chopped
1 sheet seaweed, toasted
salt
3 cups of steamed rice
steps
1. Heat olive oil on a frying pan over medium high heat and add chopped kimchi. Stir fry until the kimchi is toasted.
2. Mix kimchi juice, gochujang, and the soy sauce together in a bowl. Stir until everything is dissolved. Add rice, kimchi sauce and stir fry everything together.
4. Drizzle sesame seed oil on top of the rice and mix well.
5. If you like the bottom layer of the kimchi rice to be toasted, press rice down with a wooden spoon or spatula. Leave it toasting for 5 minutes.
6. Ready to plate! Scoop out a serving size of kimchi fried rice. Sprinkle chopped scallions on top. Then crumble seaweed over it. Enjoy!
