Musaengchae Pickled Radish

Ingredients

  • 1 pound Korean radish, chopped into matchsticks

  • 1 tsp salt

  • 2 green onion, chopped

  • 3 tbsp gochugaru, Korean red chili pepper flakes

  • 1 tsp fish sauce

  • 1 tsp salted shrimp 

  • 1 tsp organic cane sugar 

  • 1/2 tsp of plum extract (optional)

  • sesame seeds for garnish

Instructions

  1. Wash the daikon and peel the skin with a peeler. Cut them into match sticks. You can also use a mandolin slicer.

  2. Sprinkle the salt over the radish and toss with your hands. Let the radish brine in the salt for 15 to 20 minutes. You will notice the radish wilt and become bendy. Drain and squeeze out the excess liquid and set the radish into a bowl.

3. Add the chopped green onions, gochugaru, fish sauce, salted shrimp, sesame seeds, cane sugar and plum extract (optional). Gently toss the radish with the ingredients until well blended.

4. Sprinkle sesame seeds on top for garnish.

5. Eat with a steaming bowl of rice. Enjoy!
