Rainbow Rolls (vegan)
Rice noodle sheets
1/4 lettuce, sliced into thin sheets
1/3 cabbage, sliced into thin sheets
1 carrot, chopped into matchsticks
1 cucumber, chopped into quarters lengthwise
Vegetarian Porksung Or Crushed Peanut Powder
Peanut Powder and Vegetarian Porksung add a great salty and nutty texture to the rainbow rolls. You can easily purchase these in Asian or Chinese supermarkets.
Veganeise
Seaweed Sheets (nori)
Alfalfa sprouts
Steps:
1. Gather all of the ingredients and chop the vegetables.
2. On a bamboo mat, place a rice noodle sheet. Then add a toasted nori seaweed sheet on top.
3. Add each vegetable on the nori sheet, then sprinkle a tbsp of vegetable porksung or crushed peanut powder. You can also add both.
4. Using both of your hands, roll the mat so that one edge of the noodle sheet and seaweed reaches the other edge at its tightest.
5. As you grab the mat with both hands firmly holding the rainbow roll, lift the mat and firmly roll it to the opposite end again. Continue this process until you reach the end.
6. Slice the rainbow rolls into 1 inch parts. Then serve with a dollop of veganeise on top. Sprinkle radish sprouts on top.
